Characteristics

Fine textured fillets with a sweet, delicately nutty flavor.  Pliable fillets lend themselves well to stuffing, although they are somewhat delicate.

Alternatives include Dover sole, tilapia, sand dabs or flounder


For Your Menu

Delicious simply sauteed in butter with a squeeze of lemon, or try it stuffed with another Pacific Northwest favorite – Oregon rock shrimp or Dungeness crab meat.   Or, what about a classic sole piccata?

Pair this mild but delicious fish with a glass (or bottle) of a medium bodied Chardonnay – your guests will love it!
