Characteristics
Considered to be the most delicious of all the breams, Gilt-head (named for the yellow stripe above its mouth) is widely used in Mediterranean cooking.  With rich and flavorful flesh that cooks up moist and tender, these small fish are perfect for a variety of whole fish presentations, and their delicate fillets cook quickly and shine in a variety of applications.
