Characteristics
Colorado snapper is not often available – mainly due to restrictive management put in place to help manage populations. However, when we do get this fish in, put it on your specials board – it’s delicious! Works great with fresh spring herbs and vegetables.

Colorado Snapper is a real treat – with a mild, slightly sweet flavor, it cooks up moist and flaky. A versatile fish; roast it, bake it, grill it, saute it or feature it whole (when sizing is right). Like most snappers, it has great customer appeal!
